2 ‘Top’ new chefs at Dutchies

We are very pleased to announce that we have two new chefs that are absolutely ‘top’ and bring their outstanding culinary skills and passion for food to Dutchies.

Welcome to Jana and Mark! We are so looking forward to the innovations they have planned. (And, if the new Tapas menu we served when we reopened yesterday afternoon is anything to go by, we’re in for a treat! ) We asked them to tell us a bit about themselves…

Jana has recently moved from Plettenberg Bay to Hermanus where she was the chef at the renowned Emily Moon River Lodge restaurant for many years. She has worked in several restaurants over the last 10 years including Mando in Kloof Street, Cape Town.

Jana found her passion for food whilst working on yachts as a deck hand in the Caribbean. Chefs were often temperamental and, when they were, she’d be asked to help out in the galley. Jana found she loved being in the galley and on her return to South Africa went to study at the Culinary Academy.

What are you looking forward to most about working at Dutchies?

The location for one! It is every chefs dream to work in a restaurant on the beachfront and Grotto Beach is particularly spectacular. I am also looking forward to working with the owners Joke and Daan. They are passionate about service and food and are open to new ideas and change. They are the kind of people who will do what it takes to make Dutchies a success and I like to work with people like them.

What are you bringing to Dutchies?

I am passionate about innovation and I am looking forward to creating dishes that are more eclectic and current. I’d like to see the menu evolve into rustic fine dining with that special Dutch twist. With winter setting in I’d like to look at some traditional Dutch comfort foods and give them a new spin.

What is your favourite local wine?

Springfield‘s Life From Stone and Newton-Johnson‘s Felicité

What do you do when you’re not working?

I have a very demanding Jack Russell, Fudge, who needs to be walked and played with so there is a lot of walking. I also enjoy eating out and having sundowners with friends.

What are you reading at the moment?

The best restaurant you’ve eaten at so far?

Definitely Overture just outside Stellenbosch.

Asian

Your favourite comfort food?

Macaroni Cheese can’t be beaten!

 

Mark Müller

Mark, originally from Johannesburg, has come to Hermanus via New York and the Caribbean where he has been cheffing for the last 20 years.

His family lives in Hermanus and he has decided that it is time to come back to his roots. Mark is not formally trained as a chef. He has learned his skills the old school way – work, work and more work!

What are you looking forward to most about working at Dutchies?

The cosmopolitan clientele. I love meeting people from different places around the world and Dutchies is popular with visitors to South Africa. I am also really looking forward to living and working in a seaside village in South Africa. Particularly one with an 18 hole golf course!

What are you bringing to Dutchies?

Having worked with food for 30 years and cheffed for 20 of these years I am obviously bringing an enormous amount of experience. I am also a people person and having worked with, catered for and served people from all over the world I hope to add to the International service levels that Joke and Daan strive to offer at Dutchies.

What is your favourite local wine?

La Vierge Pinotage

What do you do when you’re not working?

Golf, golf and more golf!

Music of the moment?

All the right moves by One Republic

The best restaurant you’ve eaten at so far?

Moby’s in New York City. What an experience!!

Favourite type of food?

Cajun

Your favourite comfort food?

Smoked pork ribs.
